I cannot believe another year has come and gone and I find myself writing my annual New Year's Day blog. This year was a bit different from 2015 and 2016 celebrations, but my family and I still managed to have a great day together. Difference #1: The Date. One of the differences between this New Year and the past one is the date. Normally, I have my gathering on New Year's Day. However, due to scheduling conflicts, we celebrated the Friday before New Year's day instead. It actually worked out well because I had the day off of work. Difference #2: The Location. The boyfriend and I moved again. Our family had yet to visit the new place, so this event was also a house-warming of sorts. While the new place a bit smaller, there was still plenty of room for everyone. Difference #3: The Guest List. Another difference was the guest list. Some of the usual family was not able to attend this year. It was strange not having them around. The bright side was I decided to invite the BF's sister and his nephew to join us. They were a great addition to the annual event and it was heart warming to have them meet my family as well. Difference #4: The Food. Last year, I went all out. I made an Asian feast from scratch. Everything turned out delicious but boy was I tired. Especially since I was still recovering from the previous night's festivities. It was New Year's Eve after all! This year, I decided to keep it simple and make something that could be prepped the day before so I didn't have to stress. I had the perfect meal-Chicken Enchiladas! I love these because I can make the filling the night before in crock pot. All I had to do the day of is roll them up and bake. I made some black beans and got my mom to make the rice. My sister brought the chips and guacamole.
While this year was a bit different, I was still surrounded by good food, good family and good conversations. And that's what its all about, right? What resolutions did you make this year?
