Sprouts, a local grocery store, had a sale on fresh berries over the weekend. I can't resist a sale, so I loaded up my basket. The problem? I now have a ton on fresh berries. You see, I buy fruit with the best intentions, like having healthy snacks for the week. However, what usually happens is all of that beautiful, fresh fruit just sits in my fridge untouched. What's the solution, you ask? I took a cue from my mom and whipped up a fresh summer berry salad.
Not only is this recipe super easy, it's also versatile. You can eat this straight up, spoon it over pound cake, french toast, pancakes, throw it in a smoothie, or, my personal favorite, spoon it over yogurt and top with granola for a healthy breakfast. Feel free to switch up the type of berries (blackberries make a great addition). If you want to make this more fancy, add some fresh mint and lemon zest . Ingredients: 1 lb strawberries, cut into bite sized pieces 6 oz blueberries 2 tbsp honey 1 tbsp fresh squeezed lemon juice Mix the berries, honey and lemon juice together and enjoy!
